OUR STORY

Gordon St Bakery was born from a lifelong love of making things by hand. Growing up in Paris, Wilhem Isaac spent childhood holidays in the kitchen alongside his father, a chef who instilled in him an early appreciation for the craft. It was only natural that he'd find his way to baking.

Wilhem trained as a baker in Paris before moving to Australia in 2012, first settling in Perth and then making his way to Melbourne - a city he quickly fell in love with. He worked alongside some of Melbourne's most respected bakeries, including Loafer Bread and Woodfrog, deepening his craft and his connection to the Melbourne food scene.

Having spent years in the industry, Wilhem noticed something was missing: while Melbourne's north and south were well served by boulangeries, the west had little to offer. In March 2019, he opened Gordon St Bakery in Footscray, creating a space where locals could experience authentic French baking close to home. In April 2026, he expanded to Ascot Vale, broadening his reach across Melbourne's inner north-west.
